We've all been there: we go to the store, we buy bananas, and a week later they're forgotten. They get ripe, and so freckled they don't even look yellow anymore! But before you start to beat yourself up for not eating them on time, I have good news for you: these bananas are perfect to turn into a delicious bread! Banana bread is one of the simplest desserts out there. It doesn't take much to make, and if we add a little Nutella into the mix, it's not only simple... It's perfect! 🍌🍞💕
🥣 Cooking Time: 50-60mins
🍲 Serves: 10-12
Ingredients
3 large, ripe bananas 1 stick of butter 1½ cup of all-purpose flour 3/4 cups of brown sugar 2 teaspoons of granulated sugar 2 large eggs 1/2 cup of Nutella 1 tablespoon of heavy whipping cream 1/4 teaspoon of salt 1 teaspoon of vanilla extract 1 teaspoon of baking soda Optional for decorating ½ cup of chopped walnuts
¼ cup of milk chocolate chips
Directions
1. Start by adjusting a rack in the middle of your oven, then proceed to preheat your oven to 350F. Adjusting the rack to the middle will help the bread to cook evenly and prevent burning.
2. In a small saucepan, melt the butter over medium heat.
3. Continue melting the butter, constantly stirring with the help of a rubber spatula until the butter is golden brown and has a nutty aroma.
4. Remove the butter from the heat and allow to cool for 10mins.
5. While the butter cools off, remove the banana peels and place in a medium bowl. Using a fork, mash the bananas completely.
6. Once the butter has cooled, combine the melted butter and sugar with the help of a hand mixer or a stand mixer.
7. Then, add and mix in eggs, heavy cream, vanilla extract, and salt.
8. Continue mixing until the mixture resembles a smooth, thick, and shiny melted caramel.
9. Add the bananas and Nutella, and beat until just incorporated into the caramel.
10. Finally, add the flour and baking soda. Reduce the speed of your mixer, mixing until all the flour has been incorporated into the rest of the ingredients forming a smooth batter.
11. Give the batter a final stir by hand with the spatula to avoid flour lumps. This will prevent lumps of flour from forming inside the dough.
12. Grease a standard loaf pan with butter, and dust it with flour. Then pour the batter into the prepared pan, and gently tap the pan on the counter to release air bubbles. Here you can optionally add the nuts and chocolate chips on top of the bread before baking.
13. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
14. Once completely baked, allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to finish cooling off for 2-3 hours. You can enjoy your banana bread with a nice glass of milk, a cup of coffee, or even a scoop of ice cream! ¡Buen provecho!
Notes
For texture and decoration, here I added some chopped walnuts and chocolate chips on top before baking the bread. This is completely optional, and it doesn't change the flavor of the bread at all if you don't want to add anything to it. You can also add chocolate chips and chopped walnuts into the batter, if you prefer.
Most standard loaf pans are usually 8-1/2 x 4-1/2 inches, or 9x5 inches.
You can wrap the left-over bread in plastic, or store it in an air-tight container at room temperature. This will allow the bread to stay moist for at least 4-5 days.
