Nothing says comfort food like a big, warm bowl of chicken noodle soup on a gloomy day. This soup is made with an easy, flavorful, fresh-cooked broth made right as you cook your chicken. This definitely became a favorite through my cold winters when I lived in Michigan.

Ingredients
2 whole chicken breasts with bone
1 medium onion
2 garlic cloves
2 bay leaves
3 celery stalks
3 large carrots
3 large fresh thyme sprigs
8 cups of water
2 cups of egg noodles
½ tablespoon of olive oil
Salt and ground pepper to taste
Directions
1. Start by cutting your medium onion in half, and reserve one half. Take one carrot and one celery stalk and chop in 4 chunks.
2. In a large pot over medium heat, add your water, half of the onion, garlic cloves, bay leaves, one thyme sprig, your chopped celery and carrot, and your chicken breasts. Don’t forget to add salt and pepper. This will be the broth and meat of your soup.
3. While you prepare your broth and the chicken cooks, start prepping the rest of your vegetables by dicing the other remaining half of your onion, and cutting your carrots and celery into bite-size pieces.
4. Cook your chicken until tender, clearing your broth from any foam or extra fat. When your chicken is done (approximately 25-30mins), take it out on a large plate until this is cool enough to handle. With the help of a strainer, separate the stock from the vegetables used to cook your chicken.
5. Reserve the broth in a separate container and discard the vegetables from it. Once the chicken is cool enough to handle, remove the meat from the bones, pull apart into bite-size pieces and reserve, discarding the skin and bones.
6. Return the same pot used to cook the chicken, bring the fire to a low-medium heat and add half a tablespoon of olive oil. Add your cut vegetables and sweat them for about 3 minutes. Bring back the reserved stock and add it to your veggies. Add your two remaining thyme sprigs and bringing the stock to a simmer. Then add your noodles and let these cook for 5mins.
7. Slowly, add your chicken and continue cooking until the pasta is al dente. If you feel your broth needs some more seasoning, add more salt and pepper to your taste. Turn the fire off and remove the soup from the heat before serving. Now you’re ready to enjoy a good bowl of chicken noodle soup! 🍲
Notes
Depending on the size of your chicken breasts, your chicken might take a bit longer to cook.
Though most people make chicken noodle soup with celery and carrots only, don't be afraid to add any other vegetables such as zucchini, green beans, or even cabbage.
