This dish is one of the most basic recipes in almost all Mexican homes. Chile verde (also simply known as salsa verde in Mexico) is typically made with pork short ribs, a cheap cut of meat popular in both Mexico and the US. Thanks to its accessibility and incredible flavor, pork is the preferred protein to prepare this dish. So, if you still don't know what to prepare for dinner this week, I recommend these ribs in green sauce. No one will resist dinner time! 💚💚💚

Ingredients
4-5lbs of country style pork ribs 6 medium tomatillos 5-7 serrano peppers 1 bunch of cilantro 1 teaspoon ground cumin 3 garlic cloves ½ a large onion 2 bay leaves 1½ tablespoons of salt 3-4 teaspoons of beef bouillon (Knorr)
2 medium potatoes (optional)
Directions
1. In a large pot, place the pork ribs and cover with water (approx. 6-7 cups). Add ¼ of onion, salt, bay leaves, and 2 garlic cloves. Cook until the meat is almost tender (approximately 1 hour & 30 minutes).
2. Make sure to skim the excess fat as the meat cooks for a clear, less fatty broth. While the meat cooks, proceed to prepare the salsa verde.
3. In a medium saucepan, bring the tomatillos, chiles and cilantro to a boil until everything is soft enough to blend.
4. Once done, place the boiled vegetables in a blender. Add 1 cup of the boiling water, add the remaining ¼ onion, 1 clove of garlic and cumin powder and blend until you get a smooth and thick sauce.
5. After the meat has cooked and is tender, remove the onions and garlic from the broth.
6. Add the salsa verde into the boiled pork, and add the beef bouillon to taste. Allow it to simmer for 10 minutes.
7. Peel and clean the potatoes, and then cut them into bite size chunks.
8. Add the potatoes into the pot, and allow everything to simmer for another 20 minutes, or until the potatoes are fully cooked. Once ready, serve with rice for a hearty meal. ¡Buen provecho!
Notes
I highly recommend adjusting the amount of serrano peppers according to your taste, if you do not want a spicy stew. Normally when I make this stew I personally like to add potatoes, but this is completely optional. You can skip the potatoes entirely, and this will not change the flavor of the stew.
If you don't want to use pork, you can substitute the ribs for chicken thighs, or beef short ribs. You can substitute the meat for the protein of your choice!
