Cilantro Lime Chicken

Cilantro and lime play an important part of Mexican cuisine. You'll see them on tacos, menudo, pico de gallo salsa, etc. You might not always see them as the stars of the show, but they are like Beyonce's backup dancers (meaning they are important to support the show!). This recipe here is an homage to cilantro and lime; a citrusy, delicious meal!

🍲 Serves: 6-7


Ingredients

4lbs of boneless, skinless chicken thighs ½ cup of olive oil ½ cup of fresh lime juice ¼ cup of fresh lemon juice 1 teaspoon of lemon zest 2 tablespoons of chopped cilantro ½ teaspoon of ground cumin ½ cup of diced onion 1 tablespoon of minced garlic ½ teaspoon of ground black pepper 1 tablespoon of salt 1 russet potato, peeled and cut 2 cups of fresh green beans 1 large carrot, peeled and cut Fresh thyme sprigs


Directions



1. Preheat the oven at 400F, making sure the rack of the oven is in the middle.


2. In a bowl, mix all spices with olive oil, cilantro, and onion to prepare a marinade.


3. Using an oven safe container, mix carrots, potatoes, and green beans together and season them with half of the prepared marinade.

4. Season the chicken thighs with the remain of the marinade, and place them on top of the vegetables.

5. Add the fresh thyme on top and in between the marinated chicken, and bake the chicken and veggies for 1hr or until chicken is tender, and all your vegetables are cooked. Let the chicken rest for 5 minutes before serving. Bon appétit!


 

Notes

You can make this dish with boneless, skinless chicken breast, or even bone-in thighs. Personally, I find chicken breasts a little tricky to cook in a dish like this one. Chicken breasts are thicker, and leaner in fat, making it easy for them to dry out pretty fast. Because of this, I wouldn't recommend anything thicker than 3/4″ for chicken breasts. This will allow your vegetables, and the chicken to cook evenly without drying out or burning either of them.


Please know the cooking time will also depend on the thickness of the chicken. For my chicken thighs, it took exactly 1hr for them to cook fully along with the veggies.
