Easy Baby Back Ribs

These ribs are not pit master magic, but they are pretty amazing and more accesible to cook since all you need is your oven. These ribs are tender and juicy, and can be cooked all year round without having to wait for summer time to fire up the grill!




🥣 Cooking Time: 1hr & 30mins

🍲 Serves: 4-6


Ingredients

1 rack of baby back ribs (approx. 3-4lbs) ½ tablespoon of chipotle powder 1 teaspoon of garlic powder ¼ teaspoon of ground black pepper 2-½ teaspoons of salt 2 tablespoons of avocado oil 


For Avocado Salsa

1 large avocado 3 medium tomatillos 3-4 serrano peppers (or to taste) 1 garlic clove the juice of 1 small lime ¼ small onion plus ½ cup diced 1 sprig of chopped cilantro (or to taste) 1 cup hot water

Salt to taste


Directions

1. In a small bowl, combine the garlic powder, ground black pepper, salt, and chipotle powder. Set aside this dry rub.


2. Then, remove the membrane from the back of all the ribs. Rinse the rack of ribs, and pat dry with paper towel.

3. Drizzle the ribs with the avocado oil, then proceed to season them with the dry rub making sure all the ribs are covered. 


4. Wrap the ribs with plastic, or in an airtight container, and let rest in the refrigerator for least 1 hour. Before cooking, allow the ribs to rest at least 45 minutes outside of the fridge.


5. Adjust the rack to the middle of your oven, then proceed to preheat to 400F. Adjusting the rack to the middle will help our ribs to cook evenly and prevent burning.


6. In a nonstick pan, braise the ribs for 3 minutes or until the meat has browned. 


7. Remove from the pan, and place the ribs in an oven safe container. Cover with aluminum foil, and bake for 1hr or until the meat is tender. Serve with any sides of your choice. 🍖


For the avocado sauce

If you want to accompany your ribs with a rich avocado sauce, you can prepare the sauce as follows:


1. In a small sauce pan, boil the tomatillos and serrano peppers until tender.


2. Once tender, place the tomatillos and peppers in a blender with all remaining

ingredients, apart from the diced onion and chopped cilantro.


3. Blend the ingredients until smooth.


4. Season with salt to taste, and then mix the sauce with the onion and chopped cilantro. Top your ribs with this sauce, and enjoy!



 

Notes

Depending how big or small your ribs are, the cooking time could be longer or shorter. For my ribs, it took approx. 1hr and 20mins for the meat to be tender.

For the side dish here, I sliced up some zucchini and roasted them with avocado oil, garlic powder, red pepper flakes, salt, pepper, and Parmesan cheese. This is to give you an idea for side dishes, you can accompany these ribs with veggies you and your family love.
