EASY COBB SALAD

Fresh tomatoes and creamy avocados, all assembled on a bed of fresh Romaine. This easy salad will change the way you think of a healthy diet!



🥣 Cooking Time: 45mins

🍲 Serves: 2

Ingredients

2 boneless and skinless chicken breasts

1 teaspoon of garlic powder

2 tablespoons of olive oil

1 teaspoons of salt

¼ chipotle powder

¼ teaspoon of pepper

6 cups of spring mix lettuce

2 small Roma tomatoes

1 medium avocado

2 hardboiled eggs

2 tablespoons of feta cheese

4 tablespoons of your favorite low-calorie dressing*



Directions

1. Preheat oven to 425 degrees. Mix together the olive oil, garlic powder, chipotle powder, salt and pepper. Rub the chicken with this mix and let it marinate for 10mins.


2. In a baking sheet or dish, bake the chicken for approximately 45 minutes. Once done, remove the chicken breasts from the oven and cover with aluminum foil. Let it rest for 5 minutes before slicing it into strips.


3. Prepare the salad with lettuce, chicken, avocado slices, tomatoes, eggs, and feta cheese. Drizzle your salad with your favorite dressing and enjoy!


 

Notes

You can prepare your chicken any way you like, and with any condiments you may have already available in your pantry. You can also pick any greens of your choice such as romaine lettuce, baby spinach, arugula, etc. The possibilities and combinations for this tasty salad are endless! 😉🥗
