Fried rice is one of the most popular dishes you will find in any Chinese restaurant. No one can resist a delicious bowl of rice with bits of delicious meat, and vegetables! For me, this dish is in my list of comfort foods. Every time I find myself with leftover steamed rice, I know I am just a few steps closer to enjoy some delicious, homemade fried rice. So if you have any chilled, leftover rice keep reading because this could be tonight's dinner!

Ingredients
1lb of pork belly or any meat of your choice, cut into bite size pieces
3 cups of steamed, and chilled white rice (preferably long rice)
½ cup of Chinese chives chopped ¼ cup of scallions chopped, plus more for garnish 1 small carrot, peeled and diced 3 eggs 1 tablespoon of canola oil 1 tablespoon of soy sauce 1 tablespoon of sesame oil
Salt and pepper to taste
Directions
1. Start by marinating the meat with salt and pepper to taste, and allow this to marinate for at least 15mins.
2. On a large nonstick pan, add 1 tablespoon of canola oil and turn heat to medium. Add the meat, cook until tender and browned for 10 minutes.
3. Add chives, scallions, and carrots to pan, stirring occasionally. Cook the vegetables for 2 minutes.
4. Add the cooked rice, toss to coat with the meat and veggies while adding 1 tablespoon of soy sauce.
5. Drizzle 1 tablespoon of toasted sesame oil, stirring occasionally, until rice is golden, for about 2 minutes.
6. Make a small well in center of rice mixture, and add the eggs to the pan. Cook, stirring occasionally, until eggs are set, about 1 minute. Serve and garnish with more scallions. Bon appétit!
Notes
It's important to use chilled, steamed rice when making this dish. If you use freshly cooked rice, you will end up with a mushy dish.
You can always select the meat of your choice, such as chicken or even bacon (like chef David Chang does).
I would highly recommend you to visit any local asian markets around your area. If for some reason your local market doesn't carry sesame oil, Chinese chives, or soy sauce chances are you'll find almost all ingredients here. As I mentioned before on my Kimchi Stew recipe, based on personal experience, these markets have much fresher produce and ingredients. Plus, it's always good to support local business.
