Frittata

Also known as Tortilla Española, this is a simple dish that is prepared mainly with potatoes and eggs. The classic Spanish version of this recipe is certainly very tasty, but in this version we have taken the liberty of adding other ingredients to make it even more delicious.

🍲 Serves: 4-6


Ingredientes

8 large eggs ¼ cup of heavy cream ½ package of Jimmy Dean spicy pork sausage (approx. 8oz) 1/3 cup of diced onion 4 cups of baby spinach 1 medium potato peeled, and cut in bite size cubes 1 cup of sharp grated cheddar cheese (or more if desired) ¼ teaspoon of ground black pepper ½ teaspoon of salt


Directions

1. Start by adjusting a rack in the middle of your oven. This will help the frittata to cook evenly and prevent burning. Preheat your oven at 400 degrees Fahrenheit.


2. In a small pot, boil the potato with a generous pinch of salt. Remove them from the water as soon as they start to soften, and set them aside.

3. Whisk your eggs with heavy cream, salt, and pepper. Set them aside too while prepping the rest of the ingredients.


4. In a large oven-safe pan, cook the pork sausage until brown over medium heat. Then add your diced onions, potatoes, and your baby spinach. Cook everything until the spinach has wilted, and reduced in size.

5. Pour the egg mixture over the meat and vegetables, tilting the pan to make sure everything gets evenly covered with the eggs. Turn off the fire, and sprinkle the grated cheese on top. Bake in the oven until eggs are set (approx. 10-15 minutes). Cool off for a couple minutes before serving with any sides of your choice! 🍳





 

Notes

Depending how thick your potato pieces are, the boiling time can be anywhere between 5-7 minutes before they are soft.

To check that your frittata is fully cooked, slide a knife into the center after pulling it out of the oven. If your knife comes out clean, your frittata is ready. If not, place back in the oven for a few more minutes.
